Coverage is ultimately the lens through which we the audience get to take in the story. One of the films I always think of in terms of interesting unconventional coverage and framing is Eternal Sunshine of the Spotless Mind. With the film largely jumping between the memories and dreams of the main character Joel there is a surrealist and disorienting approach to the way the shots are laid out. There are several scenes that will have characters dialogue heard as if they are close by while the camera is far away and laid out more like an establishing shot or action scene, or where the camera is so close to the characters the details of their surroundings are obscured and left to your imagination. This creates a sort of blank space in your perception of scenes, similar to the gaps your memory has replaying moments from the past or a dream you didn't remember to write down.
